You will have six graded practical tests throughout the year to assess cooking skills and a final summary exam in pastry and savoury dishes. You will also be required to produce written assignments and demonstrate an understanding of the catering trade with written tests to supplement your product knowledge. You will be required to reflect on practical assessments and to set targets to aid your professional progression.

Who is it for?
This programme aims to provide you with the practical and academic skills required to work as a chef in the hospitality and catering industry. Hospitality and catering is a growth area both at home and abroad. Employment can be found in a variety of sectors. At the end of the first year, you will have the opportunity to progress to a higher level in either Professional Chefs or Front of House.

Entry Requirements
No formal entry requirements but working towards a grade 4 in English and Maths will be beneficial. A keen interest in the hospitality and catering industry, with the ability to work as part of a team and independently, as well as an expectation that you take part in all classroom activities and discussions.

What does the course involve?
Our specialist teachers will guide you extensively through this course to develop your skills and knowledge. You'll develop expertise in our dedicated facilities at our London Road Campus. We have our own on-site commercial and award-winning restaurant, Origins, which will give you a brilliant and valuable insight into the restaurant trade.
We also work to provide in-house and external competitions and workshops throughout the year. Our links with the catering industry will provide you with great job opportunities.
You will develop fundamental skills and knowledge in basic preparation and cooking. This will incorporate different cooking skills and techniques.
More specifically, you will study:
- Health & safety
- Employability in the catering sector
- Techniques such as poaching, frying, baking, boiling, roasting, and steaming.
In addition, you will undertake the Level 2 Food Safety qualification. You will be required to study English and Maths if you do not have a grade 4 or above.

Additional Notes
Upon the successful completion of this course, you will have the option to progress to the Level 2 in Professional Cookery or Hospitality. An alternative option would be an apprenticeship in catering. We can help you with this option, please go to www.scg.ac.uk/apprenticeships
