You will have eight graded practical tests throughout the year to assess cooking skills and a final summary exam in pastry and savoury. You will also be required to produce written assignments to demonstrate an understanding of the catering trade with written tests to supplement your product knowledge. You will be required to reflect on practical assessments and set targets to aid your professional progression.

Who is it for?
Level 2 will further develop your food preparation and cookery skills including a broad range of cookery processes
Level 2 Chef Diploma qualification is recognised throughout all aspects of the catering Industry from event catering to fine dining restaurants as it delivers the technical skills required by employers.
The course lasts for one year, full-time with the opportunity to progress to a level 3 qualification in Hospitality and catering or gain full time employment

Entry Requirements
You will need to have completed the Level 1 Diploma and show strong motivation with a proven commitment to hard work, team working skills and the ability to plan, analyse and reflect on practice is essential.

What does the course involve?
The course aims to provide you with the practical and academic skills required for the industry and covers all the major different cooking methods required in a professional kitchen environment.
This course builds upon the skills and techniques learnt in the Level 1 course and equips you for further study or a career in the food preparation industry.
Our expert teachers will guide you through such techniques as boiling, poaching, steaming, grilling, roasting, and baking.
You will also study food safety awareness and engage in restaurant activities such as table theatre and customer service. You will be required to work in our AA Rosette standard kitchen which will help you develop your employability skills.
In addition, you will study English and Maths if you do not have a grade 4 or above.

Additional Notes
Upon the successful completion of this course, you will have the option to progress to the Level 3 Diploma in Professional Cookery or Hospitality Management.
